Crispy Vegetables in Hot Garlic Sauce Recipe

Crispy Vegetables in Hot Garlic Sauce is an Indo-Chinese recipe made with authentic Chinese dish in Indian garlic flavor. This is a mixed vegetable recipe most liked as a snack or starter. Mixed veggies marinated in flour, fried and blended in hot garlic sauce is a perfect semi dry starter dish for any party or can be combined with evening coffee. The recipe of this dish is inherited from Cheese Chilly recipe  that is most liked Indo-Chinese dish in its kind of chilly recipes.

If you want to try something different and go beyond manchurian gravy or sweet and sour vegetables, this recipe is a spicier version that your guests will love to have with fried rice. It is also healthier and much more flavorful than a manchurian. Rich flavors of ginger and garlic is what makes this spicy and blend of ketchup makes it tangy in taste.

How to Make Crispy Vegetables in Hot Garlic Sauce

Finely chop onion, ginger, garlic and green chilly separately and keep aside. Wash and cut all the other vegetables into square cubes of about 1 inch.

Take a bowl to mix flour, pinch of salt and water to make thick batter. Mix all the vegetable cubes into the ready flour batter and leave it for marinating for 10 minutes.

To prepare garlic sauce, heat a spoon of oil in a broad pan and add chopped ginger garlic. Cook them on low flame till they turn to golden brown. Add chopped onion and green chilly and stir fry to get light brown colour.

Add salt, chilly powder, garam masala, chaat masala and soya sauce to the pan. Stir at low flame. Finally add tomato ketchup to give nice red colour to the garlic sauce. Add a spoon of water to the sauce and slow down the heat to minimum.

For frying vegetables, heat oil in a deep frying pan and keep the flame at high. Deep fry marinated veggies in a small bunch till it gets brown and crisp.

Once the colour of veggies comes out to brown, take it out from oil and add directly to the ready garlic sauce. Turn off the flame from sauce. Mix it well to coat all the Crispy veg with hot and spicy garlic sauce. Serve the dish hot and spicy with chopped onion sprinkled over the dish.

Ingredients
  • 1 Medium Piece Potato
  • 2 Medium Piece Onion
  • 1/4 Medium Piece Cabbage
  • 1/4 Medium Piece Cauliflower
  • 1 Medium Piece Carrot

  • 5-6 Piece Garlic
  • 1 Inch Stem Ginger
  • 2-3 Piece Green chilly
  • 2 Table Spoon Tomato ketchup
  • 1 Table Spoon Soya sauce
  • 3-4 Table Spoon All Purpose Flour
  • 1 Tea Spoon Red chilly Powder
  • 1 Tea Spoon Garam masala
  • Salt To Taste
  • Oil For Frying
Instructions

Recipe Notes
  • Do not fry all the vegetables at once, it will not give crisp to the dish.
