Chana Masala Recipe

Chana MasalaChana Masala Recipe- As one of the most popular dishes in the world, both in and out of India and Pakistan, chana masala or chole masala, or chholay—chickpeas or Kabuli chana cooked in totally spicy flavor with lots of Indian spices and tea water.

This particular style of chana is actually a companion of Bhatura. This rich in masala dish is a lovable dish of all punjabi families with Bhatura. It is made spicy and served hot at many dhabas in Punjab. Kabuli Chana is made in a different way also, best suited with poori or rice and is called  Kabuli chana or chole.

 

 

Ingredients-

Kabuli Chana- 2 cups

Onion- 2 medium pcs

Tomato-3 medium pcs

Green Chilly-2 pc

Ginger garlic paste-1 table spoon

Red chilly powder-1 tea spoon

Coriander powder- 1 tea spoon

Garam masala- 1 tea spoon

Cumin seeds-1 tea spoon

Chana masala powder-1 tea spoon

Tej patta-2 leaves

Tej masala(bari elaichi, loung, dal cheeni)-2 small pc each

Tea-2 table spoon

Salt-to taste

 

Method-

  1. Wash the chana in lots of water and Soak them overnight in almost 4 times water and a spoon of salt.
  2. Take tea in a cotton cloth and tie it to make tea bag/potli. This will add nice brown color to the chhole recipe.
  3. Next morning, heat a pressure cooker and put soaked chana with same water, cloves, black cardamom, tej patta and tea bag/potli. Let it cook for around 20-30 minutes at medium flame.
  4. Check the chana to be cooked by pressing it with fingers. If ready, remove the tea bag and squeeze with hands to get more color out of it.
  5. Put onion and green chilly in a blender to make smooth paste.
  6. Similarly grind tomato to form rough paste.
  7. Heat a deep pan and cook a spoon of oil. At low flame, add cumin seeds and cook till they crack. At this stage, add ginger garlic paste and cook until golden brown.
  8. Now add green chilly and onion paste and cook at low flame till it changes color to light brown.
  9. Add tomato paste and cook at high flame till it gets mixed in onion paste.
  10. Season the cooked paste with red chilly powder, coriander powder and garam masala. Mix well and cook at low flame for 5 minutes.
  11. Now add  ready masala into the boiled chana and mix generously by mashing the chana with ladle. This gives a thick consistency.
  12. Cook for another 2-3 minutes at high flame and sprinkle chana masala.Chana Masala
  13. Close the flame and garnish with green chilly stems.Chana Masala
  14. Serve the dish hot with Bhaturas.

Poori, Puri Recipe

Poori, Puri Recipe- One of its kind, Poori is liked by every Indian at almost any occasion or even without occasion. This Indian bread is eaten as a breakfast or as any meal and it is combined with any curry or bhaji. North Indian families love its combination with aloo curry and khatta meetha kaddu or petha. Also it is famous at streets with the name: Aloo-Kaddu-Puri.

Twisting the recipe with ajwain and corn flour/ sooji gives it more crisp and taste.

 

Ingredients-

Wheat flour-2 cup

Corn flour/sooji-1/2 cup

Ajwain-1 table spoon

Salt-1 tea spoon

Ghee-1 table spoon

Water- for kneading the dough

Oil-to fry

 

Method-

  1. Sieve wheat flour and corn flour/ sooji in an open vessel. Add salt, ajwain and mix well in the flour.Exif_JPEG_420
  2. Add ghee to the dry ingredients and mix well with hands.
  3. Now knead the mixed flour by slowly adding required water to prepare the dough.Exif_JPEG_420
  4. Dough should be in medium consistency, neither very hard nor very soft. Keep the dough for 10-15 minutes.
  5. Heat oil in a deep frying pan at high flame. Make small balls from the dough of around 1 inch diameter.Exif_JPEG_420
  6. To prepare poori of about 3-4 inch diameter, put few drops of oil on the rolling surface and roll one ball at a time using rolling pin.Exif_JPEG_420
  7. Similarly make all the pooris and start frying them one by one from both sides at medium flame.poori, puri

Sambar Vada Recipe

sambhar vadaSambar Vada Recipe- A south Indian Breakfast is never going to complete without having in its list Idli, Dosa, Sambar, Vada. You can see these tasty platter of food at any food joint and road side stalls if your visit to South India. Sambar Vada is actually known as Medhu Vadai in South which are deep fried crispy vadas served with sambar and Coconut Chutney.

Vada and Sambar combination is now very much famous dish all over India. It is a Vada made of urad dal and chawal to be served with Sambhar. Adding chawal gives a crispy flavor to the vadas.

For a quick fix you can try instant vada recipe.

 

 

Ingredients-

Urad dal-1 cup

Baking powder-1 table spoon

Salt-to taste

 

Method-

  1. Soak urad dal in water for around 4-5 hours or overnight.
  2. Drain water and grind both the ingredients to make thick batter. Keep the batter at warm place for fermentation for about 2-3hours.
  3. When you want to make vadas, add salt and baking powder to the batter.
  4. For frying vadas, heat oil in a deep frying pan.
  5. Take a bowl of water and wet your hands. Take a spoon full of batter and spread over your one palm to about 3 inch diameter.
  6. For restaurant style vadas, make a hole in the center with a wet finger.
  7. Wet your other hand and leave the vada in oil for frying. Flame should be medium. Fry from both the sides till light golden.
  8. Similarly fry all the vadas. sambhar vada
  9. Vada is ready to serve with hot spicy Sambhar and nariyal chutney.

Aloo Pyaz PakoraAloo Pyaz Pakora Recipe- Tradition crispy Aloo-Pyaz pakora is a simple house hold recipe cooked in every Indian house. Pakoras are one of the most favorite and frequently made dish for all especially in winters and monsoon.

I have tried to give a twist in the usual pakora recipe by cutting down all the chutneys and introducing flavored mayonnaise dip. You can also try any other chutney in Mayonnaise like- dhania chutney, imli chutney, etc.

 

Ingredients-

Gram flour (besan)- 1 bowl

Onion-2 pc

Potato-2 pc

Mayonnaise-4 spoon

Ketcup-1 spoon

Garam masala-1 tea spoon

Pepper powder-1 tea spoon

Salt-to taste

Red chilly powder-to taste

Oil- to fry

 

Method-

  1.  For making dipping sauce, take a bowl and mix mayonnaise, ketchup, salt and pepper powder and keep it aside.
  2. Add gram flour, salt, red chilly powder and garam masala in an open bowl and mix well.pakora
  3. Add required water to make medium consistency batter. Batter should be on thicker end for better frying.pakora
  4. Peel off onion, potato and cut in round shape. Onion can be shaped as rings.
  5. Heat oil in a deep frying pan and let oil to become very hot. Now dip potato pieces and onion rings in ready gram flour batter and fry in hot oil.Aloo Pyaz Pakora
  6. Remove from pan when they turn brown and place in a serving dish.
  7. Serve hot with already prepared mayonnaise dip.Aloo Pyaz Pakora

Aloo tikki kathi RollAloo Tikki Kathi Roll- Wheat flour/All purpose flour thin chapatti made up by filling creamy mayonnaise, butter and tikki.  Tikki Kathi Roll is a healthy and quick breakfast idea in your busy schedule for you and your kid. Here I have used wheat flour and Aloo tikki which can be easily transformed using dalia tikki to move to the healthier side of dish. I my self love Kathi rolls and make them in variety of ways to pack it as lunch for my daughter.

You may also try Paneer kathi roll

 

Ingredients-

Wheat flour/All purpose flour- 1 bowl

Tikki- 2 pc (Aloo tikki, Dalia tikki, Hariyali tikki, vegetable tikki, or any as per your taste)

 

Mayonnaise-2 spoon

Ketcup-1 spoon

Butter 2 spoon

Salt-to taste

Red chilly flakes-to taste

Garam masala-1/2 tea spoon

Chaat Masala-1/2 tea spoon

Oil- 1 spoon

Water-for kneading the dough

 

Method-

  1. Mix wheat flour (or maida or you can mix both in equal proportion), salt, melted butter and water to knead the dough. Keep it for 10 minutes. (You can also use already kneaded atta dough also)
  2. Meanwhile, roughly crush the tikkis in a bowl and add mayonnaise, ketchup. Season with salt, chilli flakes, chaat masala and garam masala.Aloo tikki kathi Roll
  3. Take small balls of dough and make thin chapattis of around 6-7 inch diameter.
  4. Heat the flat pan and half cook each chapatti from both sides at low flame. Pour few drops of oil occasionally.
  5. Coat one side of chapati with ketchup and mayonnaise. Put 1 big spoon of the tikki filing on half cooked chapatti and roll it tightly.Aloo tikki kathi Roll
  6. Now brush little oil on the ready rolls and shallow fry on tawa or you can grill it for 1-2 minute.Aloo tikki kathi Roll

pohaPoha Recipe- Flattened rice most famously known as Poha or Chiwda. Chiwda is a light and healthy breakfast recipe originally famous in Gujrat. Due to its nutritious values, now it is liked by all the Indian families. It is blended with vegetables or nuts depending upon the individuals taste.

Cooked with lightly fried mustard seeds, turmeric powder, green chilli, finely chopped onions and then moistened poha is added to the spicy mix and steamed for a few minutes.

I have experimented with usual recipe by adding tomatoes. Hope your kids like it.

 

Ingredients:

Flattened rice (Chiwda)-1 cup

Peanuts-1/4 cup

Onion-1 PC

Tomato-1 PC

Salt-to taste

Chaat masala-1 tea spoon

Lemon-1 PC

Vegetable oil-5 table spoon

 

Method:

  1. Heat oil in a flat pan. Fry peanuts at low flame. Also peanuts can be dry roasted or baked.Exif_JPEG_420
  2. Add washed and finely chopped onion and tomatoes to the pan.poha
  3. Put chiwda (poha) in an open sieve and run them through water once. Drain the water completely.
  4. Add the washed chiwda in the pan and cook for a minute at medium flame.poha
  5. Season the poha with salt, turmeric powder and chaat masala. Mix it well to blend all the ingredients. Cook for a while and the dish is ready for you. Squeeze half a lemon on the top and serve.poha

Idli Recipe How to make idli recipe with rice

Idli Recipe – Idli is a traditional breakfast in South Indian households. It is a savoury cake that is popular throughout India and neighboring countries like Sri Lanka. The cakes are usually four to five inches in diameter and are made by steaming a batter consisting of urad dal and rice or Suji(rawa) for its instant idli version. It tastes best with Sambhar or it can be made for a starter dish as Chili idli.

Idli Recipe

 

Ingredients:

Rice-1 cup

Urad dhuli dal-1/2 cup

Baking powder-3 spoons

Water- for soaking

Salt- to taste

 

Method:

  1. Soak rice and dal in water for 4 hours. Rice
  2. Drain the water and make a smooth batter using grinder.
  3. Keep the batter for fermenting overnight at a warm place.
  4. Next morning put salt and baking powder in the batter and mix it well.
  5. Put 1 spoon of batter in each greesed idli mould.
  6. Place the moulds in steamer and cook for 15-20 minutes.
  7. De-mould the idlis and serve with nariyal chutni and sambhar.

Rava Idli Recipe

rava idliRava Idli Recipe- Instant Idli or Rava Idli is a very popular South Indian breakfast dish which is very simple to prepare at home. It does not require any elaborate grinding like the traditional idli and can be prepared in a jiffy.

Idli is a quick and traditional breakfast recipe very popular in South Indian households. It tastes best with Sambhar or it can be made for a starter dish as Chili Idli or Masala Idli.

 

Ingredients:

Suji(rawa)-250 gms

Baking soda-1/2 tea spoon

Baking powder-2 spoons

Salt-1 tea spoon

Curd-1 cup

Water-1 cup

 

Method:

  1. Take a large bowl, add rava, baking soda and baking powder to mix well all the dry ingredients.instant idli
  2. Now add curd to make batter. You can add little water to balance the consistency. Leave the batter for 10 to 15 minutes.instant idli
  3. Give a generous mix to the batter to remove any lumps and Put 1 spoon each in idli mold. I am using microwavable molds, but you can go with normal steel molds too.instant idli
  4. Place the mold in microwave water container for 2 minutes. After 2 minutes demold the idlis.
  5. Our rava idli is ready. Serve it with hot and spicy Sambar and nariyal chutney.
